Made with both equal amounts of regular and wheat flours, this zucchini bread has a heartier flavor that balances really well with the lightest of the yogurt that acts as the base in this bread. Also, try it grilled, it’s delicious.

Cooking spray, for greasing
1 cup flour, plus extra for dusting
1 cup whole-wheat flour
1 tablespoon wheat germ
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1/4 cup light brown sugar
2 eggs, beaten
1/2 cup canola oil
Zest of 1/2 lemon
1/2 cup plain Greek-style yogurt
1 1/4 cups grated zucchini

1. Preheat oven to 325°F. Spray a loaf pan with cooking spray and lightly coat with flour, shaking off excess. Set aside.
2. In a large bowl, combine flours, wheat germ, baking powder, baking soda and salt.
3. In a medium bowl, combine sugars, eggs, oil, lemon zest and yogurt and mix until combined. Add wet ingredients to bowl of flour and stir until well incorporated.
4. Squeeze out any extra liquid from zucchini and discard. Add grated zucchini to bowl and mix to combine.
5. Transfer batter to prepared loaf pan and bake for 40-45 minutes, until a toothpick just comes out clean. Allow to cool for 10 minutes in loaf pan. Carefully remove and place cake on a wire rack (it’s important to remove from loaf pan to cool completely otherwise it will “sweat” in the pan).

Makes 1 loaf.
