QUICK + EASY ENTERTAINING TIPS

turkey burger with brie + caramelized onions

For this recipe, I like to use a small round of brie, cutting it horizontally into a thin piece so that it’s roughly the same size as the burger. The result is an evenly topped burger with a lot of gooey, melted cheese. You’ll need the sweetness of the onions and the apricot preserves to balance out the richness of the cheese but the combination is really delicious. Before slicing the cheese, place it in freezer for about 10 minutes, which will make it easier to cut.

1 tablespoon unsalted butter
1/2 large onion, thinly sliced
1/2 pound ground turkey
1 teaspoon ground cumin
Salt, to taste
Freshly ground black pepper
Vegetable oil
1 piece brie cheese
1-2 tablespoons apricot preserves
Hamburger roll, split

1. In a medium sauté pan, melt butter over medium heat. Add onions and sauté until onions are caramelized, stirringly occasionally, about 20-25 minutes. Set aside.
2. Preheat grill or grill pan to medium heat.
3. Season one side of burger with cumin, salt and pepper. Carefully brush grill with vegetable oil and grill burger, seasoned-side down for 5-8 minutes on one side. Flip and cook for another 5-8 minutes, until almost cooked through. When burger is almost done, top with cheese and cook until cheese is just melted, about 2 minutes.
4. Spread preserves on bottom of roll. Top with burger, followed by onions and serve.

Serves 1.
