This is a light and easy sauce that’s a good alternative to regular mayonnaise.
2 ounces extra-firm tofu, drained, patted dry and diced
1/4 cup fresh spinach
1 teaspoon Dijon mustard
Salt, to taste
Freshly ground black pepper
In a food processor, combine ingredients until smooth. Refrigerate until ready to serve.
Makes 1/4 cup.
