QUICK + EASY ENTERTAINING TIPS

tofu burger

This recipe was inspired by the Super Natural Cooking cookbook. This burger pairs well with sesame snow peas.

1 tablespoon unsalted butter
2 tablespoons minced onion
Salt, to taste
Freshly ground black pepper
1/2 portobello mushroom cap, diced
3 ounces extra-firm tofu, drained, patted dry and diced
1/4 beaten egg
2 tablespoons breadcrumbs
1 tablespoon sesame sticks
1 teaspoon sesame seeds
1 teaspoon sunflower seeds
1 teaspoon soy sauce
1/2 teaspoon Dijon mustard
1-2 tablespoons canola or vegetable oil

Hamburger roll, split, for serving

1. In a medium sauté pan, heat butter over medium heat. Cook onions until softened, about 5 minutes. Season with salt and pepper. Remove onions from pan and add mushrooms. Cook until softened, about another 5 minutes. Remove and allow to cool slightly.
2. In a food processor, combine remaining ingredients, except oil, along with cooled onions and mushrooms and process until smooth (add more breadcrumbs if necessary).
3. Form mixture into a patty (same size as hamburger roll) and place on a waxed paper-lined plate. Refrigerate for 15 minutes.
4. In a medium sauté pan, heat oil over medium heat. Cook until lightly browned and easy to flip, about 5 minutes. Cook on other side for another 3-4 minutes. Transfer to hamburger roll and top with your favorite toppings. Serve immediately.

Serves 1.
