QUICK + EASY ENTERTAINING TIPS

tabbouleh salad

This is a classic combination of flavors and is truly best when cucumbers, tomatoes and fresh herbs are in the peak of the season. Make the entire recipe and keep one serving on hand for a quick meal later in the week. It’s great on its own, or as a side dish for grilled chicken or lamb.

1/4 cup bulgur
3/4 cup water
2 tablespoons extra virgin olive oil
Juice from 1/2 lemon
Salt, to taste
Freshly ground black pepper
1/4 cup roughly chopped fresh mint
1/4 cup roughly chopped flat-leaf parsley
2 scallions, white and light green parts, thinly sliced
1/2 cucumber, unpeeled, seeded and chopped
1/2 pint cherry tomatoes, larger ones cut in half

1. Place bulgur and water in a saucepan and bring to a boil. Reduce heat, cover and simmer for 12-15 minutes, or until water is absorbed. Fluff and transfer to a bowl. Toss with olive oil and lemon juice and season with salt and pepper. Let stand at room temperature for about 30 minutes.
2. Add mint, parsley, scallions, cucumber and tomatoes and mix well. Serve immediately or refrigerate until later use.

Serves 2.
