sunflower salad with sesame-ginger dressing

Sesame and ginger are a great flavor combination and work really well here in this dressing. Adjust the level of sesame flavor by increasing the sesame oil to your liking. It’s fairly strong so add it in a little at a time. Sunflower greens can be found in the produce section of many gourmet specialty markets.

2 cups baby arugula
1/2 cup sunflower greens
2 tablespoons sunflower seeds

Sesame-Ginger Dressing
1/4 teaspoon minced ginger
1/4 teaspoon sesame oil, or to taste
Salt, to taste
Freshly ground black pepper
2 tablespoons extra virgin olive oil

1. In a medium serving bowl, add arugula, sunflower greens and seeds.
2. In a small bowl, combine ginger, sesame oil, salt and pepper. Slowly pour in olive oil to combine. Pour enough vinaigrette over salad to coat. Serve immediately.

Serves 1.
