QUICK + EASY ENTERTAINING TIPS

stuffed squash blossoms

Every summer my neighbor grows a wonderful bounty of fresh squash and zucchini and while she knows I like it when she leaves me some on my patio, she also knows that I love the squash blossoms even more. This recipe is one of my favorite ways to eat them and a nice recipe to make when you’re entertaining. The squash blossoms have a subtle flavor and pair really well with the tangy goat cheese and fresh herbs. They are slightly delicate to work with so handle them with care.

2 tablespoons goat cheese
1 teaspoon finely minced flat-leaf parsley
1 teaspoon finely minced fresh basil
Salt, to taste
Freshly ground black pepper
2 squash blossoms
1 tablespoon flour
2 1/2 tablespoons water
2 tablespoons extra virgin olive oil, for frying

1. In a medium bowl, combine goat cheese, parsley and basil. Season with salt and pepper.
2. Carefully open one blossom, pulling away leaves to get into center. Using a knife, carefully stuff a small amount of cheese mixture inside, pushing it down to bottom of blossom as much as possible. Fill until just full. Carefully enclose leaves around cheese mixture. Repeat with remaining squash blossom.
3. In a shallow dish, combine flour and water, making a slurry (should look like a thin pancake batter).
4. In a medium sauté pan, heat olive oil over medium heat. Dredge each squash blossom through slurry, shaking off excess batter. Add to pan and gently fry until lightly golden brown on both sides. Transfer to a paper towel-lined plate and allow to cool slightly before serving.

Makes 2.
