QUICK + EASY ENTERTAINING TIPS

spinach salad with balsamic-honey vinaigrette

This vinaigrette would also be perfect basted over grilled chicken. If you prefer to serve this salad warm, simply add the mushroom mixture to salad while it’s still warm.

4 tablespoons extra virgin olive oil, divided
1 portobello mushroom cap, thinly sliced
1/8 red onion, thinly sliced
Salt, to taste
Freshly ground black pepper
1 tablespoon balsamic vinegar
1 tablespoon plus 1 teaspoon honey
2 cups fresh spinach leaves
1-2 ounces crumbled gorgonzola or blue cheese

1. In a medium sauté pan, heat 2 tablespoons olive oil over medium heat. Add mushrooms and cook until just softened, about 5 minutes. Add red onion and cook for 1-2 minutes. Season with salt and pepper. Remove from heat and allow to cool.
2. In a small bowl, combine balsamic vinegar and honey and season with salt and pepper. Slowly whisk in remaining olive oil to emulsify.
3. In a serving bowl, add spinach leaves. Pour enough vinaigrette over salad to coat and gently toss together. Top with cooled mushroom mixture and blue cheese. Serve immediately.

Serves 1.
