Slightly tart with a hint of sweet from the shallots, this is a quick and easy salad dressing that’s ready in minutes and is one of my favorite dressings to make for a big bowl of fresh garden greens. Adjust the flavor depending on how you like it, if you want it a little more tart, add in a bit more balsamic vinegar. To add a little more sweetness, you can add in a pinch of sugar to balance it out.
1/2 shallot, finely minced
1 teaspoon Dijon mustard
1 teaspoon balsamic vinegar
Salt, to taste
Freshly ground black pepper
2-3 tablespoons extra virgin olive oil
4 ounces mixed greens
In a medium bowl, combine ingredients for vinaigrette, except oil. Slowly whisk in oil until emulsified and dressing is nice and thick. Taste for seasoning and adjust as necessary. Add mixed greens to vinaigrette and gently toss to combine, coating well. Transfer to a serving bowl and serve immediately.
