QUICK + EASY ENTERTAINING TIPS

romaine + avocado salad

This is a nice salad on its own or paired with Thai Shrimp Flatbread.

Romaine lettuce (about 1 cup)
1 Hass avocado
1/2 medium tomato, diced
1/4 15-ounce can black beans, drained and rinsed
1 scallion, white and light green parts, thinly sliced
1 1/2 teaspoons chopped fresh cilantro
1 tablespoon extra virgin olive oil
1 teaspoon lime juice
1/8 teaspoon lime zest
Salt, to taste
Freshly ground black pepper

1. In a serving bowl, add romaine.
2. Cut avocado in half, remove pit. Dice one half (save remaining half for another use) and add to bowl of romaine along with tomato, black beans, scallions and cilantro.
3. In a small bowl, combine olive oil, lime juice and zest and season with salt and pepper. Pour over salad and gently toss to combine. Serve immediately.

Serves 1.
