QUICK + EASY ENTERTAINING TIPS

roasted sweet potato salad

Slightly sweet from the honey, this salad is a perfect way to easy into the flavors of fall.

1 cup water
1/2 cup wild rice
1 sweet potato, diced
2 tablespoons extra virgin olive oil, divided
Salt, to taste
Freshly ground black pepper
1/2 shallot, thinly sliced
Juice from 1/4 lemon
1 tablespoon honey
1 tablespoon hand-torn flat-leaf parsley
1 cup fresh spinach

1. Preheat oven to 425°F.
2. In a medium saucepan, bring water to a boil. Add rice and reduce heat to simmer. Cook, uncovered, for 30-40 minutes, until rice is tender. Drain and transfer to a bowl. Set aside.
3. Meanwhile, place sweet potato on a baking sheet and toss with 1 tablespoon olive oil and season with salt and pepper. Roast for 30-35 minutes, turning occasionally. Halfway through cooking, add shallot and continue cooking until vegetables are softened. Remove and set aside.
4. In a medium bowl, combine lemon juice and honey and season with salt and pepper. Slowly whisk in remaining 1 tablespoon olive oil until emulsified.
5. To bowl of rice, add sweet potatoes and shallot, parsley and spinach and top with enough dressing to coat. Gently toss to combine and serve immediately.

Serves 1.
