QUICK + EASY ENTERTAINING TIPS

roasted fennel crostini

Roasting the fennel makes it really soft and sweet, and mellows out the licorice flavor.

1/2 fennel bulb, cored and thinly sliced, stems and fronds discarded
2 tablespoons extra virgin olive oil, divided, plus extra for serving
Salt, to taste
Freshly ground black pepper
2 tablespoons freshly grated Parmigiano-Reggiano, plus extra shavings for serving
2 1/2-inch thick slices French baguette, sliced on a diagonal

1. Preheat oven at 425°F. Place fennel slices on a baking sheet. Toss with 1 tablespoon olive oil and season with salt and pepper. Roast for about 20 minutes, until fennel is lightly golden brown. Leave oven on.
2. Transfer fennel to a food processor and blend with remaining 1 tablespoon olive oil and Parmigiano-Reggiano. Season with salt and pepper. Set aside.
3. Place bread slices on a baking sheet and bake until just golden brown, turning once, about 3-4 minutes. Divide fennel mixture equally over bread slices. Top with fresh Parmigiano-Reggiano shavings, a drizzle of olive oil and season with salt and pepper.

Serves 1.
