QUICK + EASY ENTERTAINING TIPS

roasted eggplant quesadilla

My dad made a version of this recipe for me once and I feel in love with it. It’s a great combination of flavors but if you can’t find smoked mozzarella, simply substitute with a regular variety. You can use prepared salsa for this or make your own, whichever you prefer.

1/2 medium eggplant, peeled and diced
1/4 medium onion, diced
1 small clove garlic, finely minced
3 tablespoons extra virgin olive oil, divided
Salt, to taste
Freshly ground black and pepper
2-3 ounces smoked mozzarella cheese, grated
1 flour tortilla, cut in half

Toppings
Salsa
Sour cream

1. Preheat oven to 400°F. Place eggplant, onion and garlic on a baking sheet and toss with 2 tablespoons olive oil. Season with salt and pepper. Roast for 35 minutes, turning occasionally until vegetables are golden brown. Remove and set aside.
2. Preheat grill or grill pan to medium heat. Brush outsides of tortilla with remaining 1 tablespoon oil. Flip over tortilla halves and place cheese on one side of tortilla, followed by eggplant mixture. Gently press halves together to make a sandwich. Grill for 3-4 minutes, turn and grill for another 2-3 minutes, until cheese is melted and tortilla is lightly charred on both sides. Cut into wedges and serve with salsa and sour cream.

Serves 1.
