QUICK + EASY ENTERTAINING TIPS

ricotta crostini with pea purée

FRESH PEAS

Fresh spring peas are really the star in this recipe (in a pinch, frozen ones work too). It’s ready in minutes and super easy to increase for Easter entertaining. Serve as is, with some fresh prosciutto on top or even add in some fresh lemon zest into the pea purée for a bit of added flavor.

Pea Purée
1/3 cup fresh (or frozen) peas
1 tablespoon chopped fresh flat-leaf Italian parsley
1 tablespoon Parmigiano-Reggiano
Salt, to taste
Freshly ground black pepper
1-3 tablespoons extra virgin olive oil, plus extra for drizzling

2 1/2-inch thick slices French baguette
Fresh ricotta cheese

1. Preheat oven to 425°F.
2. In a small sauce pan, bring water to a boil. Add peas and cook for about 3-4 minutes until bright green. Drain peas and place in an ice bath for about 5 minutes. Drain and transfer to a food processor along with parsley and Parmigiano-Reggiano and season with salt and pepper. Pulse for 1-2 minutes until combined. Slowly stream in enough olive oil until smooth.
3. Place bread slices on a baking sheet and bake until lightly golden brown on both sides, 5-10 minutes. Remove from oven and allow to cool slightly. Top each slice with a smear of ricotta followed by some pea purée. Drizzle olive oil over top of each slice and serve.

Serves 1.
