QUICK + EASY ENTERTAINING TIPS

rainbow carrot salad

Rainbow carrots are a unique combination of tastes with colors ranging from white and yellow to purple. They are usually sold in a small bunch but if you can’t find them, simply substitute with regular carrots.

1 1/2 cups fresh baby arugula
1 small yellow tomato, sliced
1/2 bunch rainbow carrots, thinly sliced
1/4 celery stalk, thinly sliced
1/4 cup alfalfa sprouts
1 hard-boiled egg, roughly chopped
1 ounce gorgonzola cheese, crumbled
1-2 teaspoons balsamic vinegar
1-2 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper

1. In a serving bowl, add arugula, tomato, carrots, celery, alfalfa sprouts, egg and cheese.
2. In a small bowl, combine balsamic vinegar and olive oil (to taste) and season with salt and pepper. Pour dressing over salad and serve.

Serves 1.
