QUICK + EASY ENTERTAINING TIPS

quinoa tabbouleh

This recipe is a take off of traditional tabbouleh, which is normally made with bulgur, and uses quinoa instead. Try to cut all the vegetables the same size for this recipe so that it’s easier to eat and more uniform when serving.

1/2 cup quinoa
1 cup water
1/4 cucumber, peeled, seeded and diced
1 scallion, white and light green parts, diced
1 tablespoon diced red onion
1 tablespoon chopped flat-leaf parsley
1 tablespoon extra virgin olive oil
Juice of 1/2 lemon
Salt, to taste
Freshly ground black pepper
2-3 tablespoons feta cheese, crumbled

1. In a small saucepan, bring quinoa and water to a boil. Cover, reduce heat and simmer 10-15 minutes. Grains will be translucent and germ ring will be visible when done. Transfer to a medium bowl and allow to cool.
2. Add cucumber, scallion, red onion and parsley to quinoa, followed by olive oil and lemon juice. Season with salt and pepper and gently stir to combine. Transfer to a serving bowl and top with feta cheese. Serve at room temperature or cold.

Serves 1.
