quinoa salad

This simple salad uses one of my favorite grains, quinoa. Quinoa is one of the best sources of protein you can find in a grain. It’s quick and easy to make, and has a slightly nutty flavor that makes it the perfect base for a variety of dishes.

1/2 cup quinoa
1 cup water
1 tablespoon extra virgin olive oil
1 teaspoon honey
Zest and juice of 1/2 lemon
1 ear corn
2 tablespoons chopped flat-leaf parsley
2 tablespoons chopped fresh basil
1 scallion, white and light green parts, thinly sliced
Salt, to taste
Freshly ground black pepper

1. In a small saucepan, bring quinoa and water to a boil. Cover, reduce heat and simmer 10-15 minutes. Grains will be translucent and germ ring will be visible when done. Transfer to a medium bowl and toss with oil, honey and lemon zest and juice.
2. Meanwhile, in a large pot boil enough water to cover corn over high heat. Add corn and cook until kernels are bright yellow, 5-7 minutes. Remove corn and set aside to cool. When cool enough to handle, remove kernels from corn. Stand corn on a cutting board and run a knife down each side of corn until kernels are removed. Add corn to quinoa.
3. Add remaining ingredients and toss to combine. Season with salt and pepper and serve at room temperature.

Serves 1.
