QUICK + EASY ENTERTAINING TIPS

quinoa, grilled onion + feta salad

I eat quinoa all the time and find that I can mix it with just about anything, including my favorite feta cheese (goat’s milk feta from Whole Foods). You can add in any other fresh herbs or vegetables to this salad and make it your own, depending on what’s in season or in your refrigerator.

2 scallions, white and light green parts, thinly sliced
1/2 small red onion, thickly sliced
2 tablespoons extra virgin olive oil, divided, plus extra for serving
Salt, to taste
Freshly ground black pepper
1/2 cup quinoa
1 cup water
1 tablespoon chopped flat-leaf parsley, roughly chopped
1-2 tablespoons feta cheese, crumbled

1. Preheat grill or grill pan to medium heat. Brush scallions and red onion with 1 tablespoon olive oil and season with salt and pepper. Place on grill and cook for 3-4 minutes per side, until nicely charred. Remove and set aside.
2. Meanwhile, in a small saucepan, bring quinoa and water to a boil. Cover, reduce heat and simmer 10-15 minutes. Grains will be translucent and germ ring will be visible when done. Transfer to a medium bowl and toss with remaining olive oil and season with salt and pepper.
3. Chop scallions and red onion and add to quinoa along with parsley and toss to combine. Top with feta cheese and an additional drizzle of olive oil and serve.

Serves 1.
