QUICK + EASY ENTERTAINING TIPS

pineapple rice

Sweet pineapple adds a nice texture and flavor to this bowl of rice and vegetables. You can play around with what else to add to it as well, it’s an open canvas for ingredients.

1 cup water
1/2 cup brown rice
1-inch piece fresh ginger, peeled
1/4 cup shelled edamame
1/4 cup fresh pineapple, diced
1-2 scallions, light and green parts, thinly sliced
1 tablespoon chopped freshly cilantro
Salt, to taste
Freshly ground black pepper

1. In a medium saucepan, boil water. Add brown rice and ginger and reduce heat to low, cover and simmer until rice is cooked and water is absorbed, about 25-30 minutes. Remove ginger and set aside to cool. Transfer rice to a medium bowl and allow to cool.
2. Meanwhile, bring a medium pot of water to a boil and add edamame. Cook for 5 minutes until softened, and bright in color. Drain and transfer to bowl of ice water and allow to cool for 5-10 minutes. Drain and transfer to bowl of rice.
3. Finely mince cooled ginger and add 1 teaspoon to rice. Stir to combine. Add pineapple, scallions and cilantro to rice and season with salt and pepper. Serve at room temperature.

Serves 1.
