QUICK + EASY ENTERTAINING TIPS

pasta salad with roasted red onions, spinach + feta

Roasting the red onion makes it sweeter and adds a really nice, slightly charred flavor to the dish.

1/4 red onion, sliced
3 tablespoons extra virgin olive oil, divided
Salt, to taste
Freshly ground black pepper
1/2 tablespoon red wine vinegar
2 ounces rigatoni
1/2 cup cherry tomatoes
2 tablespoons pitted kalamata olives
3/4 cup fresh baby spinach
1/4 cup feta cheese, cut into large chunks

1. Preheat oven to 425°F. Place red onion on a baking sheet and toss with 1 tablespoon oil. Season with salt and pepper. Bake for 15-20 minutes, turning once halfway through, until lightly golden brown. Set aside to cool.
2. In a small bowl, combine 1 tablespoon oil with vinegar and season with salt and pepper. Set aside.
3. Meanwhile, bring a pot of water to boil and add salt. Add pasta and cook for 7-10 minutes, until al dente. When pasta is done, drain and transfer to a medium bowl. Drizzle with remaining 1 tablespoon oil, toss and allow to cool slightly.
4. To bowl of pasta, add tomatoes, olives, spinach and red onion and toss with vinaigrette. Transfer to a serving bowl and top with feta cheese. Season with salt and pepper and serve.

Serves 1.
