QUICK + EASY ENTERTAINING TIPS

open-faced roasted tomato sandwich

This is a great way to enjoy tomatoes when they aren’t in the peak of the season. Roasting them brings out their sweetness and they’re perfect paired with goat cheese in this recipe.

1 tomato, cut into 4 slices
1/2 teaspoon chopped fresh thyme
1 tablespoon extra virgin olive oil, plus extra for drizzling
2 1/2-inch thick slices ciabatta bread
4 ounces goat cheese
Salt, to taste
Freshly ground black pepper

1. Preheat oven to 425°F. Place tomatoes and thyme on a baking sheet and drizzle with 1 tablespoon olive oil. Gently toss to coat. Roast tomatoes for 35-40 minutes, until bubbly.
2. While tomatoes roast, place ciabatta on a baking sheet and toast until golden brown on one side, about 2-3 minutes. Spread goat cheese on untoasted side and return to oven until cheese starts to melt, about 2-3 minutes. Divide roasted tomatoes evenly onto each slice, drizzle with olive oil. Season with salt and pepper and serve warm.

Serves 1.
