A simple breakfast sandwich made healthier by using only egg whites and a bit of feta cheese for flavor.
1/2 tablespoon unsalted butter
2 egg whites, beaten
Salt, to taste
Freshly ground black pepper
1-2 ounces feta cheese, crumbled
1 cup fresh spinach
2 slices whole-wheat bread, toasted
Melt butter in a non-stick pan over medium heat. Add egg whites and cook almost almost scrambled. Season with salt and pepper. When just about finished, add feta cheese and cook for another 1-2 minutes. Place spinach on bottom of one piece of toast and top with egg whites. Close sandwich and serve.
