QUICK + EASY ENTERTAINING TIPS

mesclun with apple + cranberries

A perfect salad to serve in the fall when apples are at the peak of the season. Tart, dried cranberries and pumpkin seeds add a bit of texture and crunch and the simple orange-scented dressing rounds out all the flavors.

2 cups mesclun (or mixed greens)
1/2 green apple, thinly sliced
1-2 tablespoons dried cranberries
Juice from 1/2 orange
1-2 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper
1-2 tablespoons roasted pumpkin seeds

1. In a serving bowl, add mesclun, apple and cranberries.
2. In a small bowl, combine orange juice and oil. Season with salt and pepper. Add to salad bowl and gently toss to combine. Top with roasted pumpkin seeds and serve immediately.

Serves 1.
