This is a perfect little snack anytime but it’s also a great party appetizer. The recipe can easily be increased for entertaining. You can use a regular lemon (or an orange) if you can’t find a Meyer lemon.
1 ounce feta, cut into 2 1-inch cubes
Zest of 1/4 Meyer lemon
Juice from 1/2 Meyer lemon
1 teaspoon extra virgin olive oil
Pinch of dried oregano
Salt, to taste
Freshly ground black pepper
2 kalamata olives, pitted
2 thin wedges (or slices) red onion
2 cherry tomatoes, optional
Place feta in a small bowl. Add zest and juice from lemon, olive oil, oregano and season with salt and pepper. Cover and refrigerate for 1 hour. Remove feta and place one olive on a small skewer, followed by piece of red onion. Add feta and cherry (if using) and repeat with remaining skewer. Refrigerate until ready to serve. Pour any remaining marinade over skewers right before serving.
