lemony swiss chard pesto + pasta
Homemade pestos are one of the easiest sauces you can make for pasta. They are really versatile and can be made with so many fresh vegetables and herbs. In this recipe, made with swiss chard, the pesto is a vibrant shade of green that is nicely accented with a burst of tart, lemony flavor. It’s a super simple recipe that comes together in no time.

1/2 bunch swiss chard, stems removed, trimmed and chopped
Zest and juice from 1 lemon
1 small clove garlic, roughly chopped
Salt, to taste
Freshly ground black pepper
1-2 tablespoons freshly grated Parmigiano-Reggiano, plus extra for serving
2 tablespoons extra virgin olive oil
2 ounces whole-wheat spaghetti
1. In a food processor, combine swiss chard, lemon zest and juice and garlic and season with salt and pepper. Add Parmigiano-Reggiano and combine. Slowly stream in olive oil and process until a smooth paste forms. Set aside.
2. Bring a pot of water to boil and add salt. Add pasta and cook for 7-10 minutes, until al dente. When pasta is done, drain and transfer to a medium bowl.
3. Combine pasta with desired amount of pesto and toss to combine. Transfer to serving bowl and top with additional Parmigiano-Reggiano. Serve warm.
