QUICK + EASY ENTERTAINING TIPS

This recipe is the definition of a simple salad. It’s made with only a few ingredients, and is super quick to throw together. This salad is great on its own for a light and refreshing lunch or for a more substantial salad, add couscous (any grain or pasta would work well here) and toasted pine nuts. If using pine nuts, toast them in a dry pan first; remove and then continue with the rest of the recipe.

1 tablespoon extra-virgin olive oil
1 small head broccoli, cut into florets
Salt, to taste
Freshly ground black pepper
2-3 lemon slices
Juice of 1/2 lemon
1 tablespoon lemon-infused olive oil, optional

In a medium sauté pan, heat olive oil over medium heat. Add broccoli and cook until just softened and lightly browned, about 3 minutes. Season with salt and pepper. Add lemon slices and lemon juice and toss to combine. Allow to cook for another 1 minute. Remove from heat and toss with additional lemon olive oil (if using) and serve.

Serves 1.
