lemon smashed potatoes

I love a good potato salad and am always looking for new ways to make it. Oftentimes I’ll smash the potatoes for added texture or add in some cheese for a heartier salad. But this recipe is actually one of my favorites. It’s a lighter and healthier version because it omits any creamy-based product from it, which also makes it perfect for picnics and bringing to parties. I really like mine with a lot of lemon flavor but you can adjust the amount to your own liking. Be sure to use fresh herbs here because it will really make a big difference in the finished salad. If you don’t have fresh rosemary, thyme or dill also work really well.

1 cup small Yukon gold potatoes (3-4 potatoes)
1-2 tablespoons extra virgin olive oil
Zest and juice of 1/2 lemon, or to taste
Salt, to taste
Freshly ground black pepper
1 teaspoon roughly chopped fresh rosemary

1. Place potatoes in a medium pot and add salt. Cover with cold water and bring to a boil over medium-high heat. Cook until potatoes are fork tender, about 20-25 minutes. Drain and transfer to a medium bowl.
2. Add olive oil, lemon zest and juice and season with salt and pepper. Gently smash potatoes and stir in rosemary. Serve warm or at room temperature.

Serves 1.
