QUICK + EASY ENTERTAINING TIPS

kale + white bean salad

An easy side dish packed with flavor and hearty cannellini beans, simply topped with some good, finely grated Parmigiano-Reggiano right on top.

1 tablespoon extra virgin olive oil
1/4 onion, finely minced
Salt, to taste
Freshly ground black pepper
1 small clove garlic, finely minced
2 tablespoons white wine
1/2 bunch kale, stemmed and roughly chopped
1/3 15-ounce can cannellini beans, drained and rinsed
1/4 cup water
1-2 ounces Parmigiano-Reggiano, finely grated

1. In a medium sauté pan, heat oil over medium heat. Add onions and cook until softened, about 5 minutes. Season with salt and pepper. Add garlic and cook for another 1-2 minutes.
2. Deglaze pan with wine, scraping up any browned bits of bottom of pan. Add kale and cook until wilted, about 5 minutes. Add beans and water and allow to cook through, about 5 minutes.
3. Transfer to a serving bowl and top with Parmigiano-Reggiano. Serve warm.

Serves 1.
