kale meatballs

While there is no actual “meat” in these meatballs, they are still hearty and delicious and perfect with tomato sauce for serving.

Cooking spray, for greasing
1 tablespoon extra virgin olive oil
2 tablespoons finely minced onion
Salt, to taste
Freshly ground black pepper
1 small clove garlic, finely minced
1 tablespoon white wine
1/4 bunch kale, stemmed and finely minced
2-3 tablespoons plain breadcrumbs
2 tablespoons Parmigiano-Reggiano, freshly grated, plus extra for serving
1 egg, beaten
1/4 cup quick tomato sauce, warmed, for serving

1. Preheat oven to 375°F. Spray a baking sheet with cooking spray and set aside.
2. In a medium sauté pan, heat oil over medium-high heat. Add onions and cook until softened, about 5 minutes. Season with salt and pepper. Add garlic and cook for another 1-2 minutes. Add wine to deglaze pan, scraping up any browned bits on bottom of pan. Add kale and cook until softened, another 5 minutes. Remove from heat and allow to cool slightly.
3. Meanwhile, in a medium bowl, combine 2 tablespoons breadcrumbs, Parmigiano-Reggiano with cooled kale mixture and mix until well combined. Add enough egg to bind, about 3/4 egg (discard any remaining egg). Add more breadcrumbs if necessary so mixture holds together. Shape into 2 balls and place on prepared baking sheet. Bake for 15-20 minutes, until lightly golden brown.
4. Place tomato sauce on bottom of a serving bowl and top with kale meatballs. Finish with additional Parmigiano-Reggiano over top and serve warm.
