QUICK + EASY ENTERTAINING TIPS

kale hummus

This is a mock version of hummus because it’s made with cannellini beans instead of the more traditional chickpeas as the base for the recipe.

1/4 bunch kale, stemmed and roughly chopped
1 15-ounce can cannellini beans, drained and rinsed
1 small clove garlic
Salt, to taste
Freshly ground black pepper
1/4 cup Parmigiano-Reggiano, freshly grated
1/4 cup extra virgin olive oil

1. In a medium saucepan, bring water to a boil. Add kale and blanch for about 5 minutes, until bright green in color. Remove with a slotted spoon and place in a bowl of ice water for 5 minutes.
2. Drain kale and transfer to a food processor along with beans and garlic and season with salt and pepper. Add Parmigiano-Reggiano and blend. With motor running, add olive oil, a little at a time, and process until smooth. Refrigerate until ready to serve.

Makes 1 cup.
