QUICK + EASY ENTERTAINING TIPS

jicama, cucumber + sprout salad

Jicama is a round, tan-shapped vegetable that’s often overlooked in the market. It’s really mild in flavor but adds a really nice crunch to a simple salad. Using a vegetable peeler is an easy way to peel the jicama.

Honey-Lime Vinaigrette
2 teaspoons honey
1 teaspoon white wine vinegar
Juice from 1/2 lime
Salt, to taste
Freshly ground black pepper
2 tablespoons canola oil

1 cup baby arugula
1/3 cup jicama, peeled and cut into rounds
1/3 cup cucumber, sliced
3 tablespoons broccoli or alfalfa sprouts

1. In a small bowl, combine ingredients for vinaigrette and set aside.
2. In a medium bowl, combine arugula, jicama and cucumber and toss with enough vinaigrette to lightly coat. Transfer to a serving bowl and top with sprouts and serve with additional vinaigrette if necessary.

Serves 1.
