QUICK + EASY ENTERTAINING TIPS

homemade vegetable stock.

You can pretty much add any vegetables and herbs you have on hand to this recipe. It’s a great way to use up leftover vegetables and makes a really delicious stock. Store any leftover stock in individual containers and place in the freezer for quick use later on.

1 medium onion, cut into quarters 

1 stalk celery (plus some leaves), diced
1 carrot, peeled and diced 

1 medium potato (or sweet potato), diced 

1 clove garlic, cut in half 

1 bay leaf 

1 teaspoon whole black peppercorns
Handful fresh baby spinach
Handful fresh parsley sprigs

Water

Place all ingredients in a large stockpot and cover with water. Bring to a boil; reduce heat to low and cook for about 2 hours, until vegetables are tender. Strain stock and discard solids. If not using right away, allow to cool to room temperature before storing.

Makes approximately 2 cups.
