QUICK + EASY ENTERTAINING TIPS

quick tomato sauce

This is a really easy sauce that can be enhanced in just about any way you like. You can add in fresh herbs to the simmering sauce, more garlic or even a little sugar, if the sauce is too acidic for you. The addition of the carrot in the sauce helps to add some natural sweetness to it but you may still want a touch of sugar in it as well. Store leftover sauce in freezer bags in 1/2 or 1 cup servings for up to one month.

1 tablespoon extra virgin olive oil
1/2 carrot, peeled and diced
1/2 small onion, diced
1 clove garlic, diced
Salt, to taste
Freshly ground black pepper, to taste
1 28-ounce can diced tomatoes
1-2 tablespoons sugar, optional

1. In a medium saucepan, heat oil over medium heat. Add carrot, onion and garlic and cook for about 10 minutes, until vegetables are softened. Season with salt and pepper.
2. Reduce heat to simmer and add tomatoes. Simmer, covered, over low heat for 45-55 minutes.
3. Transfer mixture to a food processor and blend until smooth (pulse mixture if you prefer it more chunky than smooth). Return mixture to saucepan and keep on warm until ready to use. Add sugar (if using), and adjust seasonings as necessary before serving.

Makes 1 batch.
