QUICK + EASY ENTERTAINING TIPS

ham + green bean salad

I take help from my local market or sandwich shop and buy only the slices I need for this salad when I ant to make it. The crunch of the fresh beans and the tangy mustard vinaigrette all work so really here, while the ham and cheese give it substance.

1/2 cup fresh green beans

Mustard Vinaigrette
1/2 teaspoon Dijon mustard
1 teaspoon white wine vinegar
Salt, to taste
Freshly ground black pepper
2-3 tablespoons extra virgin olive oil

Green leaf lettuce, for serving
1 1/4-inch thick slice black forest ham, cut into strips
1 1/4-inch thick slice swiss cheese, cut into strips
1 hard-boiled egg, chopped, for serving

1. Fill a medium saucepan with water and bring to a boil. Add greens beans and cook for 3-4 minutes. Remove with a slotted spoon and transfer to a bowl of ice water. Drain well.
2. In a small bowl, whisk together mustard and white wine vinegar. Season with salt and pepper. Slowly whisk in olive oil to emulsify.
3. Toss salad greens with enough vinaigrette to coat and transfer to a serving bowl. Top with ham and cheese slices, followed by green beans. Add chopped egg and drizzle with remaining vinaigrette. Serve immediately.

Serves 1.
