There are a variety of ways to make guacamole but I’m kind of a purest and like to be mostly about the avocado. You can add in fresh tomatoes, garlic or a little cumin to alter the flavors as you like. Leave jalapeño seeds in for a little more heat. Leftover guacamole can be stored in the refrigerator until the next day, just be sure to cover tightly with plastic wrap, placing it directly on surface of the guacamole to prevent any air from getting to it.
1 Hass avocado
Juice from 1 lime
1-2 tablespoons chopped red onion
1-2 tablespoons chopped fresh cilantro
1 teaspoon finely minced, seeded jalapeño
Salt, to taste
Freshly ground black pepper
Cut avocado in half, remove pit and scoop out flesh. Dice and add to a medium bowl along with remaining ingredients. Mix should be a chunky consistency. Adjust seasonings as desired.
Makes 2/3 cup.
