QUICK + EASY ENTERTAINING TIPS

grilled vegetable sandwich with hummus

If you find yourself with a few extra vegetables on hand (or plan ahead and grill up a few extra), then this is a great way to incorporate them into a sandwich. You can substitute any of your favorite grilled vegetables in this recipe, such as mushrooms or red or yellow peppers; even try using a flavored hummus as well. It’s a hearty and satisfying sandwich anytime.

1 medium zucchini, sliced lengthwise into thick slices
1 medium summer squash, sliced lengthwise into thick slices
1 red onion, cut into thick slices
1 portobello mushroom cap
2 tablespoons extra virgin olive oil, plus 1 teaspoon for drizzling
Salt, to taste
Freshly ground black pepper
2 slices ciabatta bread
2 tablespoons packaged hummus
Fresh baby spinach leaves

1. Preheat grill or grill pan to medium heat. Brush zucchini, squash, red onion and mushroom on each side with 2 tablespoons olive oil and season with salt and pepper. Place on grill and cook for 3-4 minutes per side, until nicely charred.
2. Grill ciabatta until golden, 2-3 minutes per side. Set aside. Spread hummus on cut sides of bread, and drizzle with olive oil. Top with grilled vegetables and spinach and serve warm.

Serves 1.
