QUICK + EASY ENTERTAINING TIPS

grilled tomato salsa

Grilling the tomatoes gives this salsa a great flavor that’s a nice twist on a more traditional salsa that uses fresh tomatoes. A little bit of heat from the chipotle salsa also helps give it a nice, smoky flavor.

5 plum tomatoes, cut in half
1/2 large white onion, sliced
2 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper
2 teaspoons chipotle chiles in adobo sauce
1 1/4 teaspoons honey
1/4 teaspoon chili powder

Tortilla chips, for serving

1. Preheat grill or grill pan to medium heat.
2. Toss tomatoes and onions with olive oil and season with salt and pepper. Place on grill and cook until nicely charred on all sides, about 5-7 minutes. Allow to cool slightly.
3. When cool enough to handle, roughly chop tomatoes and onions and place in a medium bowl. Add chipotle chiles in adobo sauce, honey and chili powder and mix until combined. Season with salt and pepper. Adjust seasoning for spice as necessary. Serve with tortilla chips for dipping.

Makes approximately 1 1/4 cups.
