QUICK + EASY ENTERTAINING TIPS

grilled pineapple, jicama + sesame salad

What you get by grilling the fruit is a nice, lightly charred flavor that really helps to sweeten up the fruit. When paired with some crunchy, fresh vegetables and a slightly sweetened vinaigrette, the combination just works really well.

This recipe is part of the asian-inspired menu.

2 1/2-inch thick slices fresh pineapple

Honey-Sesame Dressing
2 teaspoons honey
1 teaspoon dark sesame oil
1/2 teaspoon rice vinegar
2 1/2 tablespoons canola oil
Salt, to taste

1 cup mesclun greens
1/3 cup jicama, peeled and diced
1/3 cup cucumber, sliced
1-2 tablespoons sesame seeds

1. Preheat grill or grill pan to medium-high heat.
2. Add pineapple and grill for 4-5 minutes per side, until lightly charred. Remove and set aside to cool.
3. In a small bowl, combine ingredients for dressing until well combined.
4. In a medium bowl, combine mesclun greens, jicama and cucumber. Cut pineapple into cubes and add to bowl. Toss with enough dressing to lightly coat. Transfer to a serving bowl and top with sesame seeds and serve.

Serves 1.
