This is one of my favorite ways to eat pizza. Grilling the pizza dough gives it a nice char on the bottom and the freshness of the salad on top is a perfect complement. It’s like eating a crouton in every bite.

Cooking spray, for greasing
1 head roasted garlic, divided and mashed
1/2 teaspoon Dijon mustard
Juice from 1/2 lemon
Salt, to taste

Freshly ground black pepper

1/4 cup Parmigiano-Reggiano, freshly grated, plus extra for serving

4 tablespoons extra virgin olive oil, divided

1/2 small pizza dough, about 5 ounces 

Romaine lettuce (about 1-1 1/2 cups)

1. Preheat grill or grill pan to medium heat. Spray grill with cooking spray.

2. In a small bowl, combine 1 clove mashed roasted garlic, mustard and lemon juice. Season with salt and pepper. Add 1/4 cup Parmigiano-Reggiano and stir to combine. Slowly whisk in 2 tablespoons olive oil to emulsified. Set aside.

3. Gently stretch dough into a rectangle, making sure not to get dough too thin. Brush 1 tablespoon oil on one side of pizza and place oiled side down on grill. Cook until lightly charred, about 5 minutes. While pizza cooks, brush top side with remaining 1 tablespoon oil. Flip dough and cook on other side, another 5 minutes. While pizza cooks, brush top side of dough with enough roasted garlic to evenly coat, about 1/4 of mashed garlic (save remaining mashed garlic for another use). Remove dough and set aside.

4. Shred or cut lettuce into bite-sized pieces and transfer to a medium bowl. Toss with enough dressing to coat.

5. Transfer pizza dough to a cutting board and top with salad and additional Parmigiano-Reggiano. Cut into pieces and serve warm.

Serves 1.
