QUICK + EASY ENTERTAINING TIPS

greek salad | photo by: James PadillaI love a big greek salad with crisp iceberg lettuce and lots of crumbled feta cheese. It’s really easy to make at home and even better when you make your own (really easy) vinaigrette.

Romaine lettuce (about 2 cups)
1/4 cucumber, thinly sliced
1 tomato, cut into wedges
1/8 red onion, thinly sliced
2 tablespoons kalamata olives, pitted
2 ounces feta cheese, crumbled

Vinaigrette
1 small clove garlic, finely minced
1/2 teaspoon Dijon mustard
1 teaspoon red wine vinegar
1/2 teaspoon dried oregano
Salt, to taste
Freshly ground black pepper
2-3 tablespoons extra virgin olive oil

Pita, for serving

1. In a large bowl, combine romaine, cucumber, tomato, onion and olives and toss to combine.
2. In a medium bowl, combine garlic, mustard, red wine vinegar and oregano and season with salt and pepper. Slowly whisk in olive oil to emulsify. Pour enough vinaigrette over salad to coat and gently toss to combine. Top with feta cheese and serve with pita bread.

Serves 1.
