QUICK + EASY ENTERTAINING TIPS

golden beet, red onion and spinach salad

The inspiration for this colorful salad came from the prepared foods section of Whole Foods. The bright yellow color of the beets really caught my eye so I decided to create my own version of the recipe. Golden beets tend to be a little sweeter than their more popular red counterparts but are a really nice alternative because of their vibrant color. They can be stored in a plastic bag in the refrigerator for up to three weeks. Wash beets gently just before cooking

2 golden beets
1/8 red onion, thinly sliced
1 cup fresh spinach leaves
1 tablespoon white wine vinegar
2 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper

1. Preheat oven to 400°F. Wrap whole, unpeeled beets in aluminum foil and place on a baking sheet. Roast for 45-55 minutes, until beets are fork-tender. Unwrap and allow to cool. When cool enough to handle, carefully pull off skin and discard. Cut off ends and slice beets into quarters.
2. Place onion in bowl along with spinach. Add vinegar and olive oil and toss to combine. Season with salt and pepper. Transfer to a serving bowl and top with beets.

Serves 1.
