In the summer, there is nothing better than having a big bowl of this ready to go in the refrigerator for a quick meal. It’s really light and full of great crunch from all of the vegetables and perfect on those really hot summer days. Make a full batch (or even double it) because the longer the soup sits, the more the flavors will develop.
1/2 cucumber, seeded but not peeled, finely diced
1/2 red pepper, cored and seeded, finely diced
2 plum tomatoes, finely diced
1 clove garlic, finely minced
1 1/2 cups tomato juice
1/4 yellow onion, diced
1 tablespoon white wine vinegar
1 tablespoon extra virgin olive oil
Salt, to taste
Freshly ground black pepper
In a medium bowl, combine all ingredients and stir to combine. Cover and chill soup until ready to serve.
