QUICK + EASY ENTERTAINING TIPS

everyone’s favorite coleslaw

This recipe is adapted from The Taste of Summer cookbook and has become one of my favorite recipes for coleslaw. It’s a great side dish for anything on the grill, especially chicken. It’s a good recipe to make-ahead, just hold off on the apple and add it right before serving.

1/4 head green cabbage
1/2 carrot, peeled and shredded
1/2 Granny Smith apple, peeled, cored and diced
1 tablespoon finely diced red onion
1/4 cup mayonnaise
Juice of 1/2 lemon
1 tablespoon apple cider vinegar
1 tablespoon sugar
Salt, to taste
Freshly ground black pepper
1 tablespoon chopped fresh flat-leaf Italian parsley

1. Remove any tough outer pieces of cabbage and cut away the core. Shred cabbage (or thinly slice) and place in a bowl along with carrot, apple and red onion.
2. In a small bowl, combine mayonnaise, lemon juice, apple cider vinegar, sugar and season with salt and pepper. Toss to combine with cabbage mixture and refrigerate until ready to serve. Toss in parsley just before serving.

Serves 1.
