Edamame is the Japanese name for soybeans. They are full of vitamins and are a great source of protein. They are usually sold frozen either shelled or in their pods. This recipe comes together so easily and is one of my all-time favorite recipes. It’s a light, healthy take on a traditional hummus that has a wonderfully, unexpected hint of lemon that makes it really addicting.

1 cup frozen shelled edamame
2 tablespoons whole milk ricotta cheese
Zest and juice from 1-2 lemons
Salt, to taste
Freshly ground black pepper
1/4 cup plus 2 tablespoons extra virgin olive oil
Whole-wheat pita, cut into wedges, for serving

1. Bring a medium pot of water to boil and add edamame. Cook for 5 minutes until softened, and bright in color. Drain and transfer to bowl of ice water and allow to cool for 5-10 minutes.
2. Drain edamame and transfer to a food processor. Add ricotta cheese, zest and juice from 1 1/2 lemons and season with salt and pepper. Pulse to combine. Slowly pour in 1/4 cup olive oil and blend until well combined (add more olive oil or lemon juice to get a smooth consistency). Transfer to a serving bowl and serve with pita.

Makes 1 cup.
