QUICK + EASY ENTERTAINING TIPS

cucumber sandwich

When you’re short on time, this is a really quick and healthy sandwich. It’s light and crunchy and full of flavor.

2 teaspoons mayonnaise
2 slices whole-wheat or multigrain bread
1 small cucumber, thinly sliced
4 ounces frisée or other mixed greens
Alfalfa sprouts
2 slices sharp cheddar cheese

Spread mayonnaise on inside slices of bread. Top with cucumber, frisée, sprouts and cheddar and serve.

Serves 1.
