Raita is a popular dipping sauce in India. The coolness of the sauce is meant to offset spicy dishes.
1/2 cup Greek-style plain yogurt
2 1/2 tablespoons peeled, finely grated English cucumber
1/4 teaspoon finely minced garlic
1/2 teaspoon finely minced fresh mint
1 teaspoon fresh lemon juice
Combine all ingredients in a small bowl. Refrigerate until ready to serve.
Makes approximately 1/2 cup.
