QUICK + EASY ENTERTAINING TIPS

cucumber, lemon + feta salad

Slightly tangy from the vinegar, this is a super quick salad that’s light and healthy. It’s best when cucumbers are at the peak of their season.

1-2 tablespoons extra virgin olive oil
1/2 teaspoon red wine vinegar
Juice and juice from 1/4 lemon, or to taste
1/4 teaspoon fresh oregano, roughly chopped
Salt, to taste
Freshly ground black pepper
1/2 medium cucumber
2 ounces feta cheese, crumbled

1. In a medium bowl, combine oil, vinegar, lemon juice and zest and oregano. Season with salt and pepper.
2. Cut cucumber into slices and add to bowl with dressing. Toss to combine and transfer to a serving bowl. Top with feta cheese and serve immediately.

Serves 1.
