When cucumbers are in season, they can act as a great vehicle for small little appetizer bites like this one, filled with a simple feta dip. Play around with different fillings (finely chopped crab or shrimp salad also work well) and fill them with just about anything.
1 English cucumber
6 ounces plain Greek-style yogurt
1/2 cup feta cheese, crumbled
Salt, to taste
Freshly ground black pepper
Microgreens (such as arugula), for garnish
1. Cut cucumber into straight, even slices, about 1-inch thick. Using a spoon, gently scoop out a bit of center of each slice, making a hollowed out area for dip.
2. In a food processor, combine yogurt and feta and process until smooth. Season with salt and pepper. Spoon a bit of the feta mixture into each cucumber slice and top with a few sprigs of microgreens for garnish. Season with salt and pepper and serve.
