Cucumbers and feta have a natural affinity for one another and are simply perfect in this refreshing side dish. A hint of red wine vinegar adds a nice tang to the dish that’s best when cucumbers are fresh from the garden and at their peak.
2 tablespoons extra virgin olive oil
1 teaspoon red wine vinegar
Salt, to taste
Freshly ground black pepper
1/8 small red onion, thinly sliced
2 ounces feta cheese, cut into cubes
Black olives, optional
1. In a medium bowl, combine oil and vinegar and season with salt and pepper.
2. Cut cucumber in half lengthwise and scoop out and discard seeds with a spoon. Dice cucumber into 1/4-inch slices. Add to bowl with dressing.
3. Add red onion, feta cheese and olives (if using) and gently toss to combine. Serve immediately.
