QUICK + EASY ENTERTAINING TIPS

creamy artichoke dip

Super easy and creamy, this is a great recipe for entertaining.

1 14-ounce can artichoke hearts, drained, rinsed and roughly chopped
1 15-ounce can cannellini beans, drained and rinsed
1 clove garlic, minced
2 tablespoons sour cream
2 tablespoons ricotta cheese
1 teaspoon Dijon mustard
Juice from 1 lemon
2 tablespoons flat-leaf parsley, roughly chopped
1/4 cup Parmigiano-Reggiano, freshly grated, divided
Salt, to taste
Freshly ground black pepper
1 tablespoon plain breadcrumbs
1 tablespoon extra virgin olive oil

1. Preheat oven to 350°F.
2. In a food processor, combine artichoke hearts, cannellini beans, garlic, sour cream, ricotta cheese, mustard, lemon, parsley and 2 tablespoons Parmigiano-Reggiano. Season with salt and pepper. Pulse until just combined and still slightly coarse. Transfer to an 8 x 8-inch baking dish and top with breadcrumbs and remaining Parmigiano-Reggiano. Drizzle with olive oil and bake for 50-60 minutes, until lightly golden brown. Serve warm.

Serves 2-4.
